I love fancy when it’s easy. I love easy when it’s fancy. It’s a hard balance but it’s what I strive for and every now and then I’m able to obtain it. Another love of mine- Pinterest. Well it leans toward the fancy. I spend a silly amount of hours scouring threw the Pinterest-sphere to find the easy gems among the fancy. These apple rose tarts have been on my Pinterest to-do list for a long time and after a recent trip to the orchard I was ready to bang em out. They were insanely easy considering how intricate and tricky they look.

And changed a few things. Mostly to accommodate the fact that I don’t have a microwave. I put the apple slices with the juice from half a lemon and a cup of water over med heat for five minutes. I put the apricot preserves with a cup of water over med/high heat as well.
A helpful hint that worked for me was not to stick the apple wedges out over the pastry when lying them down. I just lined the edge of the slice with the end of the pastry and this prevented the slices from falling out.
They tasted as good as they looked and I look forward to baking these to celebrate fall next year.
